Curry quinoa salad

Quinoa is an ingredient extremely rich in minerals, healthy fats and proteins. Although it is usually classified as a grain, it is not. Quinoa is a so-called pseudo-grain because it is consumed, prepared and has the same nutritional value as grain, but belongs to the same type of herbs as spinach, chard and beetroot. Try this recipe for curry quinoa salad and let me know what do you think.

Ingredients:

For quinoa:
¾ cup quinoa, rinse well
½ tsp sea salt
½ tsp curry powder
1 cup + ¼ cup water

Dressing:
¼ cup Greek yogurt
¼ cup extra virgin olive oil
1 tsp apple cider vinegar
¾ tsp curry powder
¼ tsp turmeric
½ tsp sea salt
¼ tsp black pepper

Other:
½ cup carrots, diced
¼ cup finely chopped spring onions
⅓ cup raisins
⅓ cup almonds, chopped
2 tbsp chopped coriander

Instructions:
Wash the quinoa first. Then add it with salt, curry and water to a medium-sized pot. Cook it for approximately 15 minutes. While the quinoa is cooking, prepare the vegetables and dressing. When the quinoa is cooked combine it with dressing, along with vegetables and other ingredients, and mix everything well. Refrigerate the dish for 30 minutes to cool down.
Tip: This salad actually gets better the longer it stays, but be sure to keep it in a glass and hermetically sealed container in the refrigerator. Enjoy your meal!

Note:
If you overcook the quinoa you may get inedible porridge. From ¾ cup dry quinoa you will get 1 ½ cup cooked.
