French carrot salad
I buy carrots every week. They can be used all year round; raw, cooked, stewed, then used in smoothies, cream and regular soups, and various dishes. In this recipe, I’ll show you how to make French carrot salad with a delicious dressing made with Dijon mustard, garlic, parsley leaves, and lemon juice.
Ingredients:
5 handfuls grated carrots
3 tbsp French parsley leaves, finely chopped
1 clove garlic, mashed
1 tbsp Dijon mustard
½ lemon, juice
6 tbsp extra virgin olive oil
salt and pepper
Instructions:
Put the grated carrots and parsley leaves in a bowl. In another bowl mix all of the ingredients for the dressing (garlic, Dijon mustard, lemon juice, extra virgin olive oil) and pour over the salad. Add pepper and enjoy.
