Fried tofu cheese with cauliflower rice and grilled vegetables

Do you get calorie-dense food cravings at lunchtime? If you’re focused on work, so you don’t have time to prepare complicated dishes, I recommend you use this recipe for fried tofu cheese with cauliflower rice and grilled vegetables. You can make this dish very easily and quickly, and I’m sure it will fulfill you.

Preparation time: 60 minutes
Servings: 4

Ingredients:
3 cup cauliflower rice
1 pack of tofu cheese, diced
1 tbsp tamari soy sauce
1-2 tsp chili sauce (optional)
4 tsp sesame oil
1 cup shiitake mushrooms, chopped into small pieces
1 cup red cabbage, grated
1 cup red pepper, chopped into sticks
2 garlic cloves, minced
¼ cup spring onion, finely chopped
1 tbsp ground ginger

Topping ingredients:
2 tbsp peanut butter
2-3 tbsp tamari soy sauce
1 tbsp agave syrup
1 tbsp lime juice
1-2 tsp chili sauce

Serving ingredients (optional):
fresh parsley leaves
spring onion, chopped into rings
dried chili pepper
tamari sauce
peanuts

Instructions:
1. Prepare cauliflower rice by following the recipe on the link.
2. In a medium-sized bowl, mix tofu cheese, tamari soy sauce, and chili sauce, and leave the tofu to marinate.
3. Prepare the topping by mixing all the topping ingredients in a small bowl and stirring until smooth.
4. Heat 2 tsp sesame oil in a deeper pan at moderate temperature, put marinated tofu cheese, and fry it until golden. Remove from the pan and set aside.
5. In the same pan, heat 2 more teaspoons of sesame oil at moderate temperature, then add shiitake mushrooms, red cabbage, and red pepper. Cook for about 2-3 minutes.
6. After that, add garlic, spring onion, ginger, and cook for 1-2 minutes.
7. Move the vegetables onto one side of the pan with a wooden spoon, then add cauliflower rice, cover with a lid and cook for 2 more minutes, until golden.
8. Put the tofu back in the pan, add topping and cook stirring frequently until ingredients combine.
9. Serve the dish with chopped spring onion, fresh parsley leaves, and chili pepper, as desired.
10. Serve and enjoy.
