Gluten-free pasta in carrot miso sauce

You have to try out this gluten-free pasta. Even though it seems regular, it’s coated with delicious carrot miso sauce, which gives it an exotic note. Look below for preparation instructions.

Preparation time: 30 minutes
Servings: 3

Ingredients:
300 g gluten-free pasta

Carrot miso sauce ingredients:
2 red onions, finely chopped
4-6 garlic cloves, mashed
2 tbsp olive oil
2 cups carrots, finely chopped
2 cups water
¼ cup cashews
¼ tsp salt
¼ tsp black pepper
3 tbsp white miso paste

Instructions:
1. Cook the gluten-free pasta by following packaging instructions.
2. Heat the olive oil in a medium-sized pot, at moderate temperature. Simmer red onion and garlic until golden, for about 5 minutes, stirring often. Add the carrots, cashews, water, salt, and black pepper, and leave to boil. Cover with a lid, lower the temperature to the minimum, and leave to cook until carrots soften, for about 15 minutes. Mix in 3 tbsp of white miso paste (it shouldn’t dissolve completely) and leave to cool down for 5-10 minutes.
3. When it cools down, put the resulting mixture in a blender and blend until you get a smooth sauce.
4. Coat the pasta with the sauce.
5. Serve and enjoy.
