Gourmet sweet potato breakfast

The combination of sweet potatoes, onions, eggs, and bacon will brighten your morning. 🙂 Check the recipe below.

Ingredients:
2 sweet potatoes
4 slices of bacon
1 onion, diced
4 garlic cloves, minced
salt and black pepper
4 eggs

Preparation:
Preheat the oven to 200°C. Poke randomly with a fork unpeeled sweet potatoes several times, then place them directly in the oven on the baking sheet. Bake for 20-35 minutes until soft. Remove the potatoes from the oven and let them cool down. In a large saucepan, fry the bacon until crispy. Remove the bacon from the pan and place the onion and garlic in the same pan to simmer for about 5-7 minutes, or until the onion is caramelized. When the bacon cools down, chop it into small pieces. When the sweet potatoes have cooled, cut them into long slices, then remove the middle. Use the middle of the sweet potatoes by whisking them in a frying pan with the onions and garlic, and add salt, pepper and half of the chopped bacon to the mixture. Put chopped potatoes on a baking tray lined with baking paper. Pour one egg into the middle of each potato half. Sprinkle the remaining bacon on eggs. Bake for another 15 minutes or until the eggs are ready. Enjoy!
