Green dressing with mint and parsley

This is a recipe for a proper spring dressing with mint and parsley leaves, which you can eat with vegetables or protein as desired. It goes perfectly with chicken, and if you are vegan, combine it with carrot or celery sticks.

Ingredients:
½ cup water
1 cup cashews
1 cup parsley leaves, finely chopped
½ cup fresh mint leaves, finely chopped
½ cup fresh dill, finely chopped
2 tbsp chives, finely chopped
2 tbsp lemon juice + ½ tsp grated lemon peel
1 tbsp extra-virgin olive oil
2 tsp caper
1 garlic clove, mashed
¼ tsp salt
a pinch of black pepper

Instructions:
1. Mix the water and cashews in a blender, then blend until creamy.
2. After that, add the rest of the ingredients and blend again. If the mixture is too thick, add water or extra-virgin olive oil.
3. Serve the dressing with vegetables, as desired.
