Green peas and celery potage
With warmer days coming, our body needs lighter food, and there’s nothing better than refreshing potage, made of fresh vegetables. For today, I chose green peas and celery and made a fantastic potage that will provide you with needed energy. Look for the recipe below.

Ingredients:
1 tbsp olive oil
2 ¼ cup green peas
3 large carrots, finely chopped
2 celery sticks, finely chopped
1 onion, finely chopped
2 garlic cloves, mashed
2 cup cabbage, finely chopped
1 tsp fresh chives, finely chopped
1 tsp oregano, minced
2 bay leaves
4-6 cup vegetable broth or water
4 tbsp fresh parsley leaves, coarsely chopped
a pinch of salt
a pinch of black pepper
Decoration:
Chives, finely chopped
Sweet ground pepper or red chili pepper flakes
Fresh chili pepper, chopped into rings
Instructions:
1. Heat olive oil in a pot at moderate temperature, then add onion and simmer for 5 minutes. Then add carrots, celery, garlic, cabbage, chives, and oregano, and simmer for another 3-4 minutes, stirring frequently.
2. After that, add green peas, bay leaves, and vegetable broth or water, and leave to boil. Cover with a lid and lower the temperature, leave to cook for about 30 minutes or until vegetables soften.
3. Add the parsley leaves 5 minutes before removing the pot from the heat. Leave to cool and remove the bay leaves.
4. Pour the potage into a blender and blend until the ingredients combine. Add a pinch of salt and black pepper, then pour it into serving bowls.
5. Serve and enjoy.
