Healthy salad with eggs
Although I like to plan my meals, my schedule often varies and sometimes I’m not able to take 30 minutes or an hour for making lunch. In these situations, I opt for quick and delicious options containing all the necessary nutrients.
For this healthy salad with eggs, you need only a few minutes, unless you are counting egg-cooking 🙂. Try this recipe when you are busy, to avoid unhealthy meals or snacks that will have no health benefits.
Ingredients:
1 handful grated carrot
1 handful mixed baby greens
7 olives
2 radishes, thinly sliced
1 cooked egg
2 tbsp lemon juice
2 tbsp extra virgin olive oil
¼ tsp cumin
¼ tsp cilantro
a pinch of Himalayan salt
a pinch of black pepper
Instructions:
Serve all ingredients in a plate or bowl and add dressing made from extra virgin olive oil, cumin, cilantro, Himalayan salt, and black pepper. Enjoy this colorful salad!
