Kale and cauliflower salad
A combination of cauliflower and kale will provide you with a lot of vitamins and minerals, such as magnesium, potassium, iron, and vegetable fibers and many other nutrients. Try the recipe for this kale and cauliflower salad and enjoy it!
Ingredients:
¼ cup peanuts
1 head of cauliflower, separated into florets
¼ tsp red pepper flakes
¼ cup olive oil
¼ cup tahini
3 tbsp fresh lemon juice
10 cups chopped and steamed kale (for about 4-5 minutes)
½ small red onion, thinly chopped
½ cup raisins
¾ cup of water
Himalayan salt and black pepper
Instructions:
Preheat the oven to 175°C. Place the peanuts in a tray and bake until lightly browned 4 to 6 minutes. Once ready, transfer to a plate to cool down. Increase the temperature of the oven to 230°C. In a separate tray, place the cauliflower, pour 2 tbsp olive oil over, sprinkle with red pepper flakes, ½ tsp salt and a pinch black pepper. Bake for 20 to 25 minutes. Meanwhile, whisk the tahini, lemon juice, the remaining 2 tbsp of oil, ¾ cup of water, ¼ tsp salt and black pepper in a large bowl. Use more water if necessary to achieve consistency of cream. Add the steamed kale, onion, raisins, peanuts, and cauliflower and mix everything. Serve.
