Kale citrus salad
Kale + citrus fruits are a great combination for a dose of iron. This mineral can be found in green leafy vegetables, and its absorption is helped by vitamin C, which is found in orange, tangerine, and grapefruit. That’s the reason why I used these fruits for this fantastic salad. Try it out.
Pickled onion ingredients:
¼ red onion, thinly chopped
⅓ cup apple cider vinegar
1 tbsp coconut sugar
2 tbsp water
Salad ingredients:
4 cup kale, chopped
1 ½ tangerine
1 orange
1 grapefruit
1 apple
¼ cup pomegranate seeds
a drop of olive oil for kale squashing
Dressing ingredients:
3 tbsp apple cider vinegar
1 tbsp Dijon mustard
a pinch of salt
a pinch of black pepper
½ tbsp honey
⅓ cup olive oil
2 tbsp fresh orange juice
Instructions:
1. Pour the apple cider vinegar, coconut sugar, and water in a smaller bowl, then stir to combine. Add chopped onion and leave it in the fridge while you make a salad.
2. Put the kale in a large bowl, add olive oil and squash it with your fingers to soften.
3. Cut the apple, orange, grapefruit, and tangerine, then add them to a bowl with kale.
4. Make the dressing by mixing all the ingredients.
5. Add pickled onion and pomegranate seeds to a salad, and season it with dressing.
6. Serve and enjoy.
