Lebanese goji berry salad
If you mix millet, parsley leaves, mint and goji berries, you will get an unusual combination of flavors that you will love. You can eat this Lebanese goji berry salad for both lunch and dinner, as it is very light and at the same time full of nutrients needed for the body. Enjoy your meal!
Ingredients:
For millet:
½ cup uncooked millet
1 cup water
1 tbsp olive oil
¼ tsp Himalayan salt
1 clove of garlic, minced
For salad:
⅓ cup goji berries
½ cup mango, chopped into cubes
1 spring onion, finely chopped
a few slices of red onion, chopped in half moon
½ cucumber, diced
½ bunch of parsley leaves, finely chopped
1 handful of fresh mint leaves, finely chopped
2 handfuls baby spinach
2 tbsp extra virgin olive oil
1 tbsp lemon juice
a pinch of Himalayan salt
black pepper to taste
Instructions:
Pour 1 tbsp olive oil into the pan, then add the minced garlic clove. After one minute, add washed millet. Pour it in a cup of water and a pinch of salt, and let the millet cook over moderate heat for about 15 to 20 minutes. Remove the pan from the stove and let the millet cool. Then, in a large bowl, mix millet with goji berries, spring onions, cucumber, baby spinach, parsley, and mint. Add extra virgin olive oil, lemon juice, salt, pepper and stir everything. Add mango and a few slices of red onion to the top of the salad. Enjoy your meal!
