Mexican moussaka with corn and peppers

Ingredients:
2 red peppers
2 green peppers
1 hot pepper
½ red onion, finely chopped
2 cups sweet corn
2 tsp chili powder
2 tsp cumin
salt to taste
2 cups plant-based cheese
18-20 corn tortillas
2 cups homemade tomato juice
cilantro or guacamole for dressing
Instructions:
Warm-up olive oil in the saucepan. Add peppers, onions, 1 tsp chili and 1 tsp cumin. Then add sweet corn and the rest of the chili and cumin. Stir it well and add salt to taste. Grease a 23 × 33 baking sheet and heat the oven to 200ºC. Cut the tortillas into thin strips. Place half the tortillas, half the vegetables, half the tomato juice and half the cheese in the baking sheet and then repeat in the same order again. Cover with foil and bake for 15-20 minutes, until the sauce gets hot and the cheese melts. Serve with guacamole or fresh cilantro.
