Mexican tacos with mango and black beans

Who says that meals made specifically only from fruits, vegetables and legumes, without adding meat and dairy products, can’t be delicious? On the contrary, depending on the way of preparations, various ingredients, herbs and spices which are used, they can even be more delicious. As an inspiration and a stimulus for thinking in this direction, on our today’s menu, we have Mexican tacos with mango and black beans! Combination of seasonal fruits and vegetables with fresh herbs in a warm tortilla smeared with spicy, homemade mayo spread, creates a perfect balance and wakes up a positive, spring energy in everyone who tries it!

Ingredients:
4 corn tortillas
1 cup cooked black beans
2 limes
¼ – ½ tsp red pepper flakes
2 handfuls arugula
½ avocado, diced
½ mango, diced
12 cherry tomatoes, diced in quarters
2 tbsp fresh parsley, chopped
2 tbsp fresh cilantro, chopped
a pinch of Himalayan salt

Recipe for spicy mayo:

Ingredients:
150 g cashews
½ lemon
1 garlic clove, minced
2 tbsp olive oil
2 tbsp water (add more if necessary)
⅓ tsp red pepper flakes
salt as preferred

Instructions for mayo:
Put all the ingredients into a blender, and blend while adding water until the texture is smooth enough.

Instructions for tacos:
In one bowl mix the black beans with lime, red pepper flakes, parsley leaves, cilantro and salt. Heat the tortillas in the oven for several minutes, then spread the spicy mayo over them. Add black beans with spices, arugula, avocado, mango and cherry tomatoes over the mayo spread. Enjoy!
