Millet burgers with baby spinach and carrots

Recently, I asked you on my FB page what would you rather choose – vegetarian or meat burger. Most of you expressed a desire to try a vegetable burger, so for today, I prepared a recipe for millet burgers with baby spinach and carrots. Look for precise preparation instructions below. This is a very delicious and nutrient-rich vegetarian meal. Try it out!

Preparation time: 60 minutes
Servings: 6 large burgers

Ingredients:
1 cup millet, washed and strained
2 cups water
1 tsp salt
¼ tsp black pepper
1 tbsp + 3 tsp olive oil
1 onion, grated
6 cups baby spinach, finely chopped
2 carrots, grated
2 garlic cloves, mashed
2 tsp curry powder
¼ cup + 1 tbsp unsweetened almond milk
1 egg, scrambled
2 tbsp parsley leaves, finely chopped

Tahini sauce ingredients:
3 tbsp tahini paste
50 ml fresh lemon juice
salt and black pepper to taste

Decoration (optional):
½ handful rocket salad
½ cucumber, chopped into sticks
1 radish, chopped into rings
2 lemon slices

Instructions:
1. Mix millet, water, and ½ tsp of salt in a medium-sized pot and leave to boil at moderate temperature. Lower the heat to the minimum, cover with a lid and simmer until millet softens, for 15-20 minutes. Turn off the heat, leave the millet to rest in a covered pot for 10 minutes, then pour it into a large bowl.
2. Heat 1 tbsp olive oil in a pan at moderate temperature. Add onion and simmer until softened, for about 3 minutes. Add baby spinach and carrots, then simmer for another 2 minutes. Then add garlic, curry powder, ½ tsp of salt, and ¼ tsp of black pepper and simmer for about 30 seconds. Pour everything in a bowl with millet.
3. Add almond milk, egg and parsley leaves in the same bowl and mix to combine.
4. Shape 2 cm thick burgers with glass and place them in a pan, then put the pan in the fridge for about 30 minutes so the burgers harden.
5. Heat the oven at 180 °C and line it with the baking paper.
6. Take the burgers from the fridge and cover them with a total of 3 tsp olive oil. Bake them for 25-30 minutes, or until the edges get crispy.
7. Serve with seasonal vegetables and tahini sauce and enjoy.

Tahini sauce instructions:
1. Put all the ingredients in a bowl and stir until combined. If needed, add water while stirring to get the desired sauce density.
