Millet in the Mediterranean way

Millet is a super tasty cereal, mild in taste, very healthy and gluten-free. It contains many useful nutrients. It is rarely used in our area even though it goes well with other dishes. I suggest incorporating it into your regular diet. Below is a recipe for millet in the Mediterranean way.

Ingredients:
1 ¼ cups millet
3 ½ cups water
1 onion, finely chopped
1 zucchini, diced
½ eggplant, diced
1 carrot, diced
4 tbsp olive oil
⅓ cup tomato juice
2 tsp oregano
⅓ cup baked hazelnut
black pepper and salt as preferred

Instructions:
Put millet, water and ½ tsp salt in a pan. After boiling, cook on the medium heat for about 20 minutes, stirring occasionally. Finely chop the onions. Wash the zucchini, eggplant and carrot and cut them into cubes. Heat 3 tbsp olive oil in a frying pan and saute vegetables for 5 minutes. Add tomato juice and oregano and cook for about 1 minute while stirring. Add salt and pepper. Mix everything millet, and add more salt and pepper if needed. Chop the hazelnuts. Serve the dish and sprinkle the hazelnuts on top with a little olive oil (one tbs).
