Minestrone vegetable soup

Minestrone vegetable soup is an Italian dish, which is very popular. This soup is made of different types of vegetables, which you can add rice or pasta to. A combination of garlic, onion, carrot, celery and tomato is great to boost your immunity and fight off viruses and bacteria that are very common at this time of year.

Ingredients:
2 tbsp olive oil
1 brown or red onion, diced
2 large carrots, peeled and diced
1 celery stalk, chopped
1 bay leaf
3 garlic cloves, minced
2 tsp dried mixed herbs
3 cups tomato puree
8 cups water
1 tbsp apple cider vinegar
½ cup soup pasta of your choice, uncooked
2 cups kale, finely chopped
1 tsp Himalayan salt
Freshly ground black pepper to taste

Instructions:
Heat olive oil in a medium-size pot over medium heat. Add garlic, carrots, celery, a pinch of Himalayan salt and black pepper. Simmer for 5-6 minutes or until vegetables are tender. Reduce the heat, add bay leaf and dry herbs. Simmer for 2-3 more minutes and then add liquid. Add tomato puree, cook for 1 minute and then add 8 cups of water. After that, add 1 tsp of Himalayan salt and ground black pepper. Increase the heat and bring it to boil. Add ½ cup of soup pasta and chopped kale. Cook it until pasta in the soup is ready. Remove pot from the stove, add 1 tsp of apple cider vinegar, remove the bay leaf and add extra Himalayan salt and pepper to taste. Serve in soup bowls and enjoy!
