Mushroom quinoa risotto

Something different! Mushroom quinoa risotto is a delicious and quick dish you can serve with your favorite fresh salad, blanched or steamed vegetables. Special ingredients of this recipe are chopped peppers and parsley leaves. Enjoy!

Ingredients:
1 cup cooked quinoa
12 mushrooms, chopped
1 red pepper, diced
2 handfuls grated carrot
3 tbsp parsley leaves, finely chopped
1 small head of red onion
1 tbsp sesame oil
salt and black pepper to taste

Instructions:
Cut the onion in half-moons. Put several pieces on the side that you will later serve over the finished risotto. Heat sesame oil in a pan and fry the onions. After one minute, add the red peppers and grated carrots, and sauté for a few minutes until the vegetables are tender. Then add the mushrooms to the pan and keep sautéing for another 5 minutes. Add quinoa, parsley leaves, salt, and black pepper. Serve the risotto with a few slices of red onion.
