Mushroom, spinach and ginger pasta

PASTA LOVERS, here we go!!! For the beginning of March, I have prepared you a recipe for mushroom, spinach, and ginger pasta, which will knock you off your feet. That is exactly how my photographer described this fantastic recipe while trying it out during the photo shoot. So, cook the pasta of your choice, or by my recommendation gluten-free and follow the instructions.

Ingredients:
3 ½ cups mushrooms
2 cups baby spinach
1 tbsp grated ginger
1 tsp minced garlic
1 tsp sesame oil
150 g buckwheat pasta
salt, pepper, red pepper flakes as preferred
1 tbsp lemon juice

Instructions:
Simmer the garlic on sesame oil, then add grated ginger. Stir often then add chopped mushrooms. Cover it and leave the mushrooms to simmer for 8 minutes. Meanwhile, boil the water and cook the buckwheat pasta or any other of your choice. After 8 minutes add baby spinach and the spices – salt, pepper, red pepper flakes and 1 tbsp lemon juice. Drain the pasta and mix it with the mix made out of mushrooms and spinach. Bon appetit.
