Noodles with vegetables and sesame dressing
A few days ago, I had a desire to eat some Chinese meal, and instead of ordering it, I used foods that I had at home and prepared fantastic Chinese noodles with vegetables and sesame dressing. I wrote the recipe immediately because I want you to try it too. Bon appetit!
Preparation time: 20 minutes
Servings: 2-3
Ingredients:
150 g rice noodles
1-2 tsp olive oil
4 garlic cloves, mashed
1 tbsp ginger, finely chopped
½ onion, finely chopped
4 cups mixed vegetables, finely chopped (as desired – cabbage, pepper, broccoli, mushrooms, asparagus, green peas)
Sesame dressing ingredients:
3 tbsp soy sauce
3 tbsp tahini paste
1-2 tbsp water
2 tbsp apple cider vinegar
2 tbsp sesame oil
1 tbsp agave syrup
1-2 tsp chili paste
salt and pepper to taste
Decoration:
2 tbsp peanuts, finely chopped
1 tsp black sesame seeds
1 bunch of parsley leaves
Instructions:
1. Cook the noodles following the packaging instructions, strain them, and set them aside.
2. Heat the olive oil in a large pan at moderate temperature. Add onion, garlic, ginger, and mixed vegetables, simmer for about 3-4 minutes, lower the temperature, and continue simmering until the vegetables soften. Set aside.
3. Mix all the dressing ingredients in a small bowl and stir with a fork until smooth.
4. Mix the noodles and vegetables in a large bowl, then cover with the resulting dressing.
5. Serve and enjoy.
