Pasta with dried tomato pesto sauce

Dried tomatoes are one of the most popular ingredients in Italian cuisine. I used it to prepare pasta with pesto sauce, which you will surely like. You can make this dish in 25 minutes, and it will keep you full for hours. Bon appetit!

280 g raw whole wheat or gluten-free pasta, as desired
85 g dried tomatoes
5 tbsp extra virgin olive oil
1 bunch of fresh parsley leaves, finely chopped + for decoration
2-4 garlic cloves, mashed
10 g vegan parmesan + for decoration

1. Cook the pasta following the packaging instructions.
2. To make pesto sauce, mix dried tomatoes, extra virgin olive oil, garlic, parsley leaves, and vegan parmesan in a blender, and blend until combined.
3. Mix the pasta with the resulting sauce.
4. Decorate with parsley leaves and vegan parmesan.
5. Serve warm and enjoy.
