Pear cake
You don’t have to prepare cakes only for birthdays or other celebrations. Why don’t you brighten one of the upcoming days for yourself and your loved ones? I liked this idea, so I decided to reward myself with a very tasty pear cake. You’ll adore it!
Preparation time: around 1 hour 20 minutes
Servings: 8
Ingredients:
100 g hazelnuts
140 g oat or rice flour
175 g Ghee butter + more for coating the pan
140 g coconut sugar
2 eggs
5 small pears, peeled, core removed (2 diced, 3 sliced)
50 g dark chocolate, crushed into small pieces
2 tbsp homemade sugar-free apricot jam
Instructions:
1. Heat the oven at 180 °C.
2. Coat the round cake mold with Ghee butter.
3. Blend hazelnuts finely. Add oat or rice flour, Ghee butter, and blend again. Then add coconut sugar and eggs and blend again.
4. Peel 2 pears, remove the core and cut into cubes.
5. Mix in the pears and dark chocolate into the mixture you previously combined in a blender.
6. Spread the resulting mixture in the prepared mold. Peel the remaining pears, remove the core and cut them into slices, then arrange them on the top of the cake.
7. Bake the cake for 50-60 minutes, until the mixture hardens. Cover the warm cake with slightly warmed apricot jam.
8. Cool, serve, and enjoy.
