Polenta with arugula
How do you prepare your polenta and what do you eat it with? I ate it as a kid with yogurt or sour milk, but since I excluded dairy products from my diet, I was looking for an alternative to make this breakfast more delicious. So I finally created a recipe with arugula seasoned with extra virgin olive oil and pumpkin seeds, and I got a fantastic meal. I love polenta with arugula!
Ingredients:
⅔ cup polenta
1 cup water
1 handful pumpkin seeds
1 large handful arugula
1 tbsp extra virgin olive oil
1 tsp lemon juice
½ tsp of salt
Instructions:
Pour water and ⅓ tsp of salt into the pan and wait for it to boil. Lower the temperature and gradually add the polenta, stirring constantly. When the polenta has thickened, move the pot off the stove. Prepare the dressing consisting of olive oil, lemon juice, and salt. Season the arugula in a separate bowl, then place it on top of the polenta served on the plate. Sprinkle some pumpkin seeds on top of the dish. Enjoy!
