Polenta with cashew cream and cherries
I dedicate this recipe to all MOMS, children, and others who like to eat polenta for breakfast. I adore it. If you’re a little bored of salty polenta, you can make a sweet version of it in combination with cherries and cashew cream. How to make polenta with cashew cream and cherries, find out below.
Ingredients:
1 cup polenta
2 cups water
1 tbsp agave syrup
1⁄2 cup cherries
Ingredients for cashew cream:
3⁄4 cup cashews, soaked overnight in water or cooked for 15 minutes if previously not
soaked
2-3 tbsp water
1 tbsp lemon juice
2 tsp agave syrup
Instructions:
1. Mix cashew nuts, 2-3 tbsp water, lemon juice and 2 tsp agave syrup in a blender, and blend until you get the whipped cream consistency.
2. Meanwhile, boil water in a pot, and then gradually add the polenta, stirring constantly.
3. Add 1 tbsp of agave syrup to the polenta, and serve the polenta in a bowl. Add cashew cream and cherries over the top, and enjoy this sweet breakfast or dessert.
