Potato salad
One of the most common holiday recipes in my country is potato salad. So I decided to replace the old fashioned ingredients. I am not considering healthy and swapped white vinegar with apple cider vinegar and mayo with delicious Dijon mustard. Try making it and you will be amazed by this delicious potato salad.
Ingredients for salad:
1 kg potatoes, peeled and chopped into 5 mm rings
a pinch Himalayan salt
a pinch black pepper
1 tbsp apple cider vinegar
2 tbsp finely chopped spring onion
¼ cup finely chopped parsley leaves
Ingredients for dressing:
2 ½ tbsp Dijon mustard
1 garlic clove, minced
¼ tsp Himalayan salt
¼ tsp pepper
4 tbsp apple cider vinegar
3 tbsp extra virgin olive oil
¼ cup fresh dill, finely chopped
Instructions:
Wash potatoes, peel them and cut into 5 mm rings. Put them into a cooking pan with water, season with salt and cook until they’re soft enough to pierce them with a fork. Be careful not to overcook the potatoes. After cooking, wash the potatoes in cold water and drain well. Move them to a larger bowl and add salt, pepper and apple cider vinegar. Set the bowl aside. Prepare the dressing and add more vinegar or spices if necessary. Mix dressing with potatoes and add spring onions and parsley. Let it sit for 30 minutes to allow flavors to combine. Enjoy!
