Pumpkin, leek and apple pottage

You can make pottages with a variety of ingredients. Do not limit yourself to use the same ingredients all the time. Experiment and I am sure you will love the dishes you’ll get. I have decided to go outside of my comfort zone this time and add an apple to the pumpkin and leek soup that I normally make. This turned out to be a great idea! Try this pumpkin, leek and apple pottage.

Ingredients:
1 tbsp coconut oil
½ leek, finely chopped
1 medium onion, diced
2 garlic cloves, minced
500 g grated pumpkin
1 sweet apple, cut into cubes
6 cups of water
1 tsp Himalayan salt
½ tsp ground cardamom
½ tsp ground anise
½ tsp apple cider vinegar

Instructions:
Sautée leek, onion and garlic on coconut oil. After several minutes, add apple, grated pumpkin and pour in 6 cups of water. Season and simmer for 15 minutes. Remove the pot from heat and blend with a stick blender until smooth. Serve and enjoy!
