Pumpkin oats muffins
Nothing can warm you up better than delicious, warm muffins, right? Write another recipe for this fantastic treat, that I made of pumpkin and oats. Enjoy!
Preparation time: 45 minutes
Servings: 12 muffins
Ingredients:
1 ½ cup spelt flour
½ cup coconut sugar
1 ½ tsp gingerbread spice mix
1 tsp baking soda
2 tbsp lemon juice
a pinch of salt
1 ½ cup pumpkin puree (Steam the pumpkin, then blend it.)
½ unsweetened almond milk
½ cup coconut oil, melted
1 ½ cup oats
¼ cup raisins (optional)
Topping ingredients:
⅓ cup coconut sugar
1 tbsp oat flour
¾ tsp gingerbread spice mix
1 tbsp coconut oil
Decoration:
a pinch of oats
Instructions:
1. Preheat the oven at 180 °C.
2. In a large bowl, mix spelt flour, coconut sugar, gingerbread spice mix, baking soda, lemon juice, and salt, and stir until combined.
3. Add almond milk, melted coconut oil, and pumpkin puree to the dry ingredients, and stir until combined. Add oats and raisins into the resulting mixture.
4. Spread the mixture evenly into the muffin tray.
5. Bake muffins for 20-25 minutes.
6. In the meantime, mix the topping ingredients.
7. When muffins are baked, coat them with a teaspoon of topping.
8. Serve them warm and enjoy.
