Pumpkin soup

If you like simple and healthy meals I suggest you try this delicious pumpkin soup recipe. Enjoy!

Ingredients:
6 cups chopped pumpkin
½ cup celery, chopped
½ cup carrots, peeled and chopped
8 cups water
⅓ cup fresh parsley, finely chopped
1 handful fresh basil
juice of 1 lemon
sea salt

Instructions:
Place chopped pumpkin in a pot. Add celery, carrots and pour 8 cups of water so it covers all the vegetables. Cook for 35 minutes or until the pumpkin is tender and cooked through. Then, transfer all the cooked vegetables and part of the water in a blender (don’t add too much liquid to prevent the soup becoming too watery). Add fresh parsley, basil and lemon juice. Blend all the ingredients. Serve and enjoy!
