Quinoa and avocado salad

Salads with quinoa are my favorite. This food ingredient is rich in fiber, minerals, healthy fats and proteins. It affects the overall feeling of fullness and pleasure, and it is going great with different vegetables. That is why I share my new recipe with you – a salad to which I added avocado, carrots, cherry tomato and a handful of fresh spices and sesame oil dressing. Yummy!

Ingredients:
½ cup cooked quinoa
1 handful arugula salad
1 handful grated carrot
½ avocado, diced
3 cherry tomatoes, diced in quarters
½ red pepper, diced
1 spring onion, finely chopped
4 tbsp sweet corn, cooked
⅓ cup fresh spices of choice (basil, parsley leaves, mint)
1 ½ tbsp sesame oil
1 tsp apple vinegar
¾ tsp Himalayan salt
a pinch of red pepper flakes
a pinch of pepper

Instructions:
In a big bowl mix quinoa, arugula, carrot, red pepper, spring onion, corn and fresh spices of choice. Then in a separate bowl make a dressing of sesame oil, apple vinegar, pepper, red pepper flakes and salt, then mix well all these ingredients and pour over the salad. In the end, add the avocado and cherry, then serve.
