Quinoa and chickpea salad
Quinoa and chickpea salad meal that will keep you full for a long time. Check out the recipe below and enjoy its taste.
Ingredients:
For lemon and walnut oil dressing:
2 tbsp walnut oil
1 tbsp extra virgin olive oil
juice of 1 lemon
1 clove of garlic, minced
1 tsp raw organic honey or agave syrup
a pinch of Himalayan salt
a pinch of black pepper
For salad:
2 cups arugula salad
1 clove of garlic, minced
1 cup cooked quinoa
¾ cup cooked chickpeas
3-4 radishes, sliced into rings
¼ cup chopped walnuts
1 tbsp fresh dill, finely chopped
1 tbsp fresh basil, finely chopped
¼ cup baked tofu cheese
a pinch of Himalayan salt and a pinch of black pepper
Instructions:
To make the dressing, mix the ingredients mentioned above and set aside. Then in a large bowl combine arugula, garlic, quinoa and chickpeas. Add radishes, walnuts, dill, basil and tofu to it, then pour the dressing pour over it. Add more salt and pepper if needed.
