Quinoa bean salad

Try this delicious combination of red beans, quinoa and vegetables. It’s great that you can make it in just a few minutes. Here is the recipe for a quinoa bean salad.

Ingredients:
¼ lemon, squeezed
2 tsp olive oil
mix of dry Mediterranean spices
½ cup pre-cooked quinoa
⅔ cup pre-cooked or canned red beans
1 sprig onion, finely chopped
1 tomato, finely chopped
2 tbsp chopped parsley leaves
2 tbsp chopped fresh mint
1 handful baby spinach
salt and pepper

Instructions:
Mix liquid ingredients in a small cup for the dressing. In a large bowl add all the other ingredients and then pour the dressing over it.
