Quinoa salad

Fantastic quinoa salad, ideal for any season of the year. Serve it with some protein, depending on your preferences (meat, fish or plant source). You will definitely enjoy it!

Ingredients for the salad:
1 cup cooked quinoa
1 red pepper, diced
½ red onion, chopped
1 cucumber, cut into quarters
1 bunch of parsley leaves, chopped finely
1 handful pumpkin seeds

Ingredients for the dressing:
3 tbsp extra virgin olive oil
1 tbsp of lemon juice
salt and pepper

Instructions:

Put all the ingredients into a bowl. Mix the dressing and then pour it over the salad. You can serve the salad with some extra fresh green leafy vegetables and protein of your choice  (example: meat, fish, mushrooms or legumes). 

Note: 
If you are cooking quinoa just before making the salad, it is important to let it cool down before you mix it with the vegetables, protein and dressing.
