Quinoa salad with orange and mint

This simple quinoa salad recipe contains juicy oranges, sweet cranberries, chickpeas rich in protein, fresh mint, parsley leaves, and the dressing of exotic taste. This is a perfect summer salad, but you can prepare it all year round. I think you’ll like it as much as I do. Look below for the recipe.

Preparation time: 30 minutes
Servings: 2-4

1 cup cooked quinoa, strained
½ cup cooked chickpeas, strained
3 oranges, peeled and cut into rings
½ red onion, diced
½ cup dry cranberries
3-4 tbsp fresh mint leaves, finely chopped
3-4 tbsp fresh parsley leaves, finely chopped
1 handful of rocket salad

Dressing ingredients:
¼ cup apple cider vinegar
1 orange juice
1 tbsp olive oil
1 garlic clove, mashed
salt and black pepper to taste

1. Cook the quinoa and chickpeas following the packaging instructions, strain them and set them aside.
2. Mix all of the dressing ingredients in a small bowl, then set the dressing aside.
3. In a large bowl, mix the quinoa, chickpeas, orange slices, red onion, cranberries, fresh mint leaves, fresh parsley leaves, and rocket, then coat everything with the dressing.
4. Serve and enjoy.
