Quinoa salad with peanut dressing
I don’t know if I told you that, for years, the most read text on my blog was the one about quinoa. It seems that this pseudo-grain is very common in your diet, which makes me very happy. It is extremely healthy, nutritious, and gluten-free, and it can be combined with various foods. That’s why I created a quinoa salad recipe, adding vegetables and peanut dressing. Bon appetit!
Preparation time: 20 minutes
Servings: 2
Salad ingredients:
2 cups raw quinoa
1 cucumber, diced
1-2 red and green pepper, diced
2 mangoes, diced
3 carrots, grated
½ head of red cabbage, grated
½ handful of almond, finely chopped
½ handful of peanuts, finely chopped
½ handful of cashews, finely chopped
Peanut dressing ingredients:
½ cup peanut butter
⅓ cup soy sauce
⅓ cup apple cider vinegar
1-2 tbsp chili sauce
1 garlic clove, mashed
2 cm ginger root
Instructions:
1. Cook the quinoa by following packaging instructions.
2. Mix all the dressing ingredients in a blender, and blend until smooth.
3. Pour the quinoa into a bowl, and arrange cucumber, mango, pepper, carrot, and red cabbage. Add finely chopped nuts and season with peanut dressing.
4. Serve and enjoy.
