Quinoa with broccoli and sweet potatoes

PLANT-BASED TAKING OVER! Whether you eat meat or not, dedicate at least one day a week to a diet based on plant foods. This QUINOA, BROCCOLI AND SWEET POTATOES dish is an ideal option for lunch or dinner, with which you can include protein to taste (legumes, mushrooms, tofu).

Ingredients:
1 tbsp olive oil
1 garlic clove, mashed
1 cup cooked quinoa
1 cup broccoli, splitted into small flowers
1 cup boiled sweet potatoes, diced
a pinch of Himalayan salt
1 tbsp lemon juice
a pinch of red ground pepper

Instructions:
Heat the olive oil in a pot, then add the mashed garlic clove. Sautée for one minute, then add broccoli and cooked quinoa. Continue to sautée for 3-5 minutes, and then add spices – salt, lemon juice and red ground pepper. Pour the quinoa and broccoli in a bowl and add the cooked sweet potatoes. Mix all the ingredients and serve this dish with fish, meat, mushrooms or legumes to taste. Bon Appetit!
