Raw carrot salad with ginger and lemon dressing
When you don’t know what to do with the carrots you have in your refrigerator, here’s a suggestion you’ll always be happy to remember after trying this delicious, crunchy and refreshing salad. The main ingredients are raw carrots with ginger and lemon dressing. This salad is a fantastic addition to a variety of dishes and is ideal for serving during spring and summer, as a side dish.
Ingredients for the salad:
2 carrots, chopped into small sticks
2 spring onions, finely chopped
100 g edamame
a handful of freshly chopped cilantro
2 tbsp black sesame seeds
Ingredients for the dressing:
1 tbsp of grated or chopped fresh ginger
juice of 2 limes
1 tsp honey
a pinch of red pepper flakes
salt and pepper to taste
Instructions:
Peel and chop the carrots into thin sticks, and then chop the spring onions and cilantro, place all ingredients into a bowl. Sprinkle with the black sesame seeds and stir. Make the dressing by mixing well all the ingredients. Pour it over the salad and serve!
