Roasted beet salad with plums and walnuts

Ingredients:
4 large beets, peeled and chopped in spirals
1 tbsp olive oil
4 ripe plums, chopped into small pieces
60 g walnuts
1 handful of fresh mint leaves
Dressing ingredients:
1 ½ tbsp extra-virgin olive oil
½ tbsp red wine vinegar
½ tbsp balsamic vinegar
Instructions:
1. Pour 1 tbsp olive oil in a pan lined with baking paper, arrange the beets and bake in the oven at 180 °C for about 15 minutes.
2. While the beets are baking, mix all the dressing ingredients in a jar.
3. Take the beets out, then mix with plums, walnuts, and fresh mint. Season with dressing.
4. Serve and enjoy.
