Roasted beet salad with plums and walnuts

This is the right moment to do something good for your immunity and to please your senses. Roasted beet salad with plums and walnuts will help you with that. Beets are considered one of the healthiest vegetables, so I advise you to include them in your menu whenever you can. In this salad, the sour taste of beets and plums will break the slightly pungent taste of walnuts. Great combination.

Preparation time: 30 minutes
Servings: 3-4

Ingredients:
4 large beets, peeled and chopped in spirals
1 tbsp olive oil
4 ripe plums, chopped into small pieces
60 g walnuts
1 handful of fresh mint leaves

Dressing ingredients:
1 ½ tbsp extra-virgin olive oil
½ tbsp red wine vinegar
½ tbsp balsamic vinegar

Instructions:
1. Pour 1 tbsp olive oil in a pan lined with baking paper, arrange the beets and bake in the oven at 180 °C for about 15 minutes.
2. While the beets are baking, mix all the dressing ingredients in a jar.
3. Take the beets out, then mix with plums, walnuts, and fresh mint. Season with dressing.
4. Serve and enjoy.
