Roasted cauliflower and quinoa salad
If you are on a diet regime with a goal to lose weight, including a cauliflower to your menu is a must. This low-calorie vegetable does not contain many carbohydrates, but it is full of fibers that enhance digestion, therefore speed up the metabolism. In combination with gluten-free quinoa, it will help you to stay full longer, take in many nutrients, and also save your leanness. Don’t forget to serve with a protein of choice, ie. legumes, a piece of fish, poultry, turkey, or meat. Bon appetit.
Ingredients:
For dressing:
¼ cup extra virgin olive oil
½ tbsp tahini
Juice of ½ a lemon
1 tbsp balsamic vinegar
⅛ tsp Himalayan salt
⅛ tsp turmeric
¼ tsp curry
1 tsp raw organic honey
For roasted cauliflower:
1 cauliflower
2 tbsp sesame oil
2 tsp minced garlic
¼ tsp turmeric
½ tsp curry
⅛ tsp red pepper flakes
Himalayan salt and pepper as preferred
For salad:
previously roasted cauliflower
1 cup cooked quinoa
1 red pepper, diced
¼ cup chopped parsley
¼ cup raisins
Instructions:
Mix all the ingredients for dressing in a cup. Then prepare roasted cauliflower: mix all the spices, then pour it over the cauliflower which you previously chopped into smaller pieces and poured sesame oil over it. Heat the oven to 200°C degrees. Put the cauliflower in a dish covered with baking paper, and leave it to be roasted for 15 minutes. Afterwards, leave it to cool down. Cook the quinoa, mix with cauliflower, red pepper, raisins, and dressing. Serve and enjoy!
