Salmon in dried tomato sauce
Delicious salmon in dried tomato sauce! A great idea for lunch or dinner, special occasions or holidays. Try it and you will be delighted. 🙂 Enjoy!
Ingredients:
4 tbsp olive oil
600 g wild salmon (3 fillets)
2 cloves of garlic, minced
¼ onion, blended
2 tbsp dried tomatoes, finely chopped
⅓ tsp red pepper flakes
⅓ tsp red chopped peppers
⅔ cup unsweetened soy milk
2 tsp fresh basil
¼ cup of vegetable broth or water
salt and pepper to taste
2 tbsp fresh parsley leaves, finely chopped
Instructions:
Season salmon fillets with salt and pepper. Preheat 3 tbsp of olive oil in a pan, then add salmon and fry for 2-3 minutes on each side. Remove the salmon from the heat and set aside. Next, add another tbsp of olive oil to the same pan. Fry the dried tomatoes, basil, onion and garlic, chili and red pepper flakes for about one minute. Add the vegetable broth and soy milk, and stir until the sauce thickens. Season the sauce with salt and pepper to taste. Bring salmon back to the pan and fry it for a few more minutes. Serve and enjoy.
