Salmon in miso paste with broccoli
This time, I rolled salmon in a glaze made of mustard, honey, miso paste, soy sauce, olive oil, and lime juice, and I can tell you I wasn’t wrong. This combination of ingredients goes perfectly with fish. As a side dish, I served broccoli, seasoned with fantastic umeboshi vinegar. Piquant and delicious meal.

Ingredients:
1 tbsp dijon mustard
1 tsp soy sauce
2 limes, 1 for juice and 1 for decoration if desired (sliced)
2 tbsp extra-virgin olive oil
4-5 cup broccoli, chopped in florets
2 tbsp white miso paste
1 tsp raw organic honey
a pinch of salt
4 salmon fillet
2 spring onions, finely chopped
a pinch of sesame seeds
1 tbsp umeboshi vinegar
Instructions:
1. Preheat the oven at 200 °C.
2. Steam the broccoli florets for about 5-10 minutes, until they soften, and pour cold water over them. Season with a pinch of salt, 1 tbsp olive oil, 1 tbsp umeboshi vinegar and sprinkle sesame seeds on top.
3. Mix the mustard, miso paste, honey, soy sauce, lime juice, and 1 tbsp olive oil in another bowl, and mix until ingredients combine.
4. Dry the salmon fillets with paper towels, remove the skin and coat them with the glaze. Leave in the glaze to rest for about 30 minutes.
5. Arrange the fillets in the middle of the pan, and surround them with broccoli florets. Bake for about 10 minutes, until salmon gets golden.
6. Pour the glaze over salmon, turn broccoli, then bake for another 2 to 4 minutes.
7. Serve with lime slices and enjoy.
