Salmon with roasted sweet potato
The time has come for another protein meal which will warm up your body and also enhance your mood. My choice is wild salmon, which I love to eat. Serve it with roasted sweet potato and fresh arugula salad. Not only will you give the meal an exotic note, but you will also fulfill it with additional nutritious ingredients. Enjoy!
Ingredients:
1 lemon, half
1 smaller sweet potato, diced
150 g wild salmon
1 bigger handful arugula salad
1 tbsp fresh parsley leaves, finely chopped
½ red pepper, diced
2 tbsp olive oil
1 tbsp extra virgin olive oil
Salt and pepper as preferred
Instructions:
Preheat the oven to 220°C. Layer the baking tray with baking paper, then add the diced sweet potato which you will season with 1 tbsp olive oil and a pinch of salt and pepper. Leave it to roast for 10 minutes. Meanwhile, cover the salmon fillet with one tbsp olive oil, add salt and pepper over it, then take the baking tray out of the oven and place the salmon on three lemon slices next to the sweet potato. Roast for about 12 to 15 minutes. After that, take the fish and sweet potato out of the oven and serve on a plate. Add arugula salad, which you will season with extra virgin olive oil, lemon juice, and salt as preferred. Finally, garnish with chopped parsley leaves and red pepper.
