Savory pancakes with oat and coconut flour

Who doesn’t love pancakes? I think no person in the world doesn’t enjoy them, whether they choose it savory or sweet. I present you a recipe for savory pancakes that I made of oat and coconut flour. I combined them with avocado and onion, but you can choose the ingredients as desired.

Preparation time: 20 minutes
Servings: 6-7

Ingredients:
½ cup unsweetened almond milk
4 egg whites
½ cup + 2 tbsp oat flour
1 tbsp coconut flour
1 tbsp nutritional yeast (optional)
2 tsp Dijon mustard
¼ tsp baking powder
¼ tsp baking soda
½ garlic clove, mashed
1 tsp coconut oil
a pinch of salt
a pinch of black pepper

Decoration: (amount as desired):
avocado
red onion
parsley leaves
dried chili pepper
black sesame seeds

Instructions:
1. Pour almond milk, egg whites, Dijon mustard, and garlic in a smaller bowl, then mix until combined.
2. In another bowl mix coconut flour, nutritional yeast, oat flour, baking powder, baking soda, a pinch of salt, and black pepper and stir well.
3. Pour the mix of almond milk, Dijon mustard, garlic, and egg whites into dry ingredients, and mix everything well.
4. Coat the pan with coconut oil, and pour a ¼-½ cup of the resulting mixture per pancake. Fry them 1-2 minutes at moderate temperature, then turn and fry for another 1-2 minutes, or until golden on both sides. Repeat the process for as long as you have the mixture.
5. Serve with avocado, red onion, parsley leaves, dry chili pepper, and black sesame seeds. Enjoy!
