Savory zucchini balls (Kolokythokeftedes)
You can prepare numerous fantastic dishes with zucchini, and each one will have a different, special taste. Greek traditional savory zucchini balls are an excellent choice for those who don’t have much time for cooking and still want to eat something that will keep them full for a long time. They’re made from a mixture of this vegetable, herbs and vegan cheese, after which they’re rolled into integral wholewheat flour and fried in olive oil. Preparation time: 30 minutes
Servings: 8-10 balls
Ingredients:
2 cups zucchini, peeled, grated, and well strained
⅓ cup vegan cheese by choice, grated
¾ cup integral wholewheat flour
¼ tsp fresh dill, finely chopped
¼ tsp parsley leaves, finely chopped
¼ tsp fresh oregano, finely chopped
¼ cup olive oil
a pinch of salt
a pinch of black pepper
Instructions:
1. Mix all of the ingredients (except olive oil and integral wholewheat flour) in a large bowl and stir well.
2. Heat the olive oil in a pan at moderate temperature.
3. Make the balls in the size of a golf ball from the resulting mixture. Roll them in integral wholewheat flour and place them in the pan.
4. Fry the balls on every side, until golden brown.
5. Remove the balls from the pan and place them on a paper towel, to drain off the oil.
6. Serve and enjoy.
