Seasonal vegetable soup
I have created this great recipe that is delicious and warming. Try this seasonal vegetable soup and let me know what do you think. Enjoy!
Ingredients:
1 cup carrots, grated
3 cups vegetables of your choice
3 cups filtered water
1 orange
½ cup onion, finely chopped
1 celery stick, chopped
2 garlic cloves, minced
3-4 pitted dates
1 small piece of ginger root, approximately 2-3 cm
2 tbsp coconut oil
1 tsp Himalayan salt
For decoration:
Pumpkin seeds and fresh parsley leaves.
Instructions:
Warm up the coconut oil in a pan, add garlic and onion. After 2 minutes add Himalayan salt and celery, and sauteé for 5-8 minutes. Then, add carrots, water and the rest of the vegetables and cook for 10 more minutes (or even less) until carrots are tender. Pour the mixture and rest of the ingredients in the blender and blend until you reach a smooth consistency. Add orange and ginger and blend for 1 more minute. If the soup is too thick feel free to add more water. While serving you may garnish the soup with pumpkin seeds and fresh parsley leaves.
