Soup with sweet potato, peanut butter, and spinach

This nutrient-rich and easy-to-prepare sweet potato soup will become your favorite dish with exceptional taste. I added spinach, next to sweet potato and peanut butter, because I try to include green leafy vegetables in every meal since it has a significant role in strengthening the immune system.

Preparation time: 40 minutes
Servings: 6-8

2 tbsp coconut oil, melted
½ onion, diced
1 jalapeno pepper, finely chopped
2 garlic cloves, minced
3 sweet potatoes, peeled and diced
1 cup pelati
1 ½ cup unsweetened coconut milk
2 cups water
1 tsp salt
½ tsp turmeric
½ cup peanuts, finely chopped
¼ cup peanut butter
1-2 cup spinach, finely chopped

1. Heat coconut oil in a large pot at moderate temperature, then add garlic, onion, and jalapeno pepper. Simmer until vegetables soften.
2. Then, add sweet potato, pelati, coconut milk, water, peanuts, salt, and turmeric. Cook until sweet potato softens.
3. After that, add spinach and peanut butter. Cook for another 1-2 minutes.
4. Serve and enjoy.
