Ingredients:
1-2 tbsp olive oil
½ medium-sized onion, finely chopped
¾ cup celery sticks, finely chopped
3 garlic cloves, finely chopped
½ tsp fresh thyme, finely chopped
a pinch of black pepper
a pinch of salt
2 cups fresh string beans
1 cup brown rice
1 ½ cup vegetable broth
350 g mushroom mix, by your choice
Decoration:
Fresh parsley leaves or thyme
Instructions:
1. Simmer the onion and celery in olive oil for about 3-4 minutes until softened. Then add mushrooms, garlic, thyme, black pepper, and salt.
2. Add string beans and brown rice. Remove from the heat, then add vegetable broth and stir until combined.
3. Pour the resulting mixture into a refractory bowl. Bake for 45-55 minutes, until liquid evaporates and rice softens.
4. Leave to rest for about 10 minutes before serving. Decorate with fresh parsley or thyme.
