Summer avocado rolls
Fresh rolls are one of my favorite dishes during the summer when the temperatures are high. I love to wrap fresh vegetables, fruit, and spice herbs into rice wraps, in combination with rice noodles and peanut butter. A real summer refreshment! Try it out!
Ingredients:
½ cup rice noodles
4 rice leaves for the rolls
½ tsp extra virgin olive oil
1 tbsp light sesame oil
1 cup mushrooms, fresh or dried
½ tsp soya sauce
a few fresh basil and mint leaves
½ avocado, sliced
1 cup arugula
peanut butter for dipping
Instructions:
Cook the rice noodles as advised on the packaging. After that, heat the sesame oil in a frying pan and poach the mushrooms on the medium temperature until softened, for about 5 minutes. Pour soya sauce over them, then leave them on the side to cool down. Soak the rice leaves into warm water for 5 seconds. After that, place them on a dry, clean kitchen cloth. Place the noodles, mushrooms, avocado, fresh herbs and arugula in the middle of a rice leaf. Wrap it up and roll in. Serve them with peanut butter for dipping.
