Summer watermelon cucumber salad with lime dressing

Have you ever thought about mixing watermelon and cucumber? I have and I immediately put it into action. I added white sesame seeds and spring onions to these summer foods and got a refreshing salad, which you can eat as a dish or with protein, as desired. Look for this light Asian-style dish recipe below.

Preparation time: 20 minutes
Servings: 2-4

4 cups watermelon, diced
1 cup cucumber, diced
3 spring onions, cut into small pieces
¼ cup parsley leaves, finely chopped
a few slices of jalapeno chili pepper (to taste)
½ handful of red cabbage, finely chopped
1-2 tsp white sesame seeds, for decoration
salt and black pepper to taste

Sesame lime dressing ingredients:
1 tsp ground ginger
1 ½ tbsp lime juice
1 ½ tbsp agave syrup
1 tbsp sesame oil
2 tsp soy sauce

1. Put the watermelon, cucumber, spring onions, and parsley leaves in a medium-sized bowl.
2. Mix the dressing ingredients in a small bowl, then pour the dressing over the watermelon salad.
3. Mix everything well, then add the jalapeno pepper and red cabbage.
4. Add salt and black pepper to taste, then sprinkle white sesame seeds on top.
5. Serve and enjoy.
