Super kale salad

If you want to be healthy, you should include green leafy vegetables to your diet. Kale is one of the most nutritious leafy vegetables because it is an excellent source of calcium, magnesium, vitamins K, A, C, vegetable fibers, iron, folate, antioxidants, flavonoids, and lutein. Try this super kale salad. It is easy to prepare, and you will surely enjoy it.

Ingredients:
1 head of kale
2 carrots, grated
¼ cup onion, finely chopped
½ cup cranberries
½ cup sunflower seeds

Dressing:
2 tbsp balsamic vinegar
2 tbsp honey
6 tbsp olive oil

Instructions:
Massage the kale for at least 3 minutes. This way, the kale will soften and become much easier to digest due to the softening of the plant fibers. Then mix all other ingredients and pour over the dressing. Enjoy!
