Sweet potato and green pea pottage

Since we have had unexpected snow again, I have prepared a recipe for sweet potato and green pea pottage so you can warm yourselves up during these unusually cold days. The combination of these two nutrient-rich ingredients will boost your immunity and ensure sufficient protein intake. In addition, thanks to vitamin K, green peas support bone health. Sweet potato is ideal for diabetics because it has a low Glycemic Index and ensures slower absorption of glucose.

Ingredients:
2 tbsp extra virgin olive oil
1 large sweet potato, cut into small cubes
2 cloves garlic, minced
½ tsp Himalayan salt
½ tsp black pepper
5 cups water
2 cups green peas
2-3 tsp lemon juice
1 handful fresh basil, finely chopped

For decoration:
1 tbsp spring onion, finely chopped
½ tsp red pepper flakes

Instructions:
Heat olive oil in a medium-size pot over moderate heat. Once hot, add garlic and cook for a couple of minutes or until the garlic slightly changes color. Add sweet potato and water. Simmer covered for 15 minutes until sweet potatoes are tender. Add green peas and cook for 5 more minutes. Remove from heat and let it cool down. Stir in salt, pepper, fresh basil, lemon juice and blend it all together until it reaches a creamy texture.
Serve and decorate with a sprinkle of spring onion and red pepper flakes to taste.
